Ideas taken from our childhood "tray bakes". I remember school dinner slabs of Sponge with pink custard & Coconut Sponge with coated with Jam & Coconut shavings. i have fond memories of Mum baking slabs of sponge & fudge. After school it was a glass of milk a chunk of sponge then out to play in all weathers.
Now we live in a time when we try and sometimes fail to alter the recipes in favour of fatless sponges with too many eggs & artifical sweeteners giving the sponges an after taste. Tip; Try without the extra eggs & leave out the sweeteners and artifical flavour/essences.
Simply whisk 2 or 3 egg whites and gently fold in a small amount of flour with the beaten egg yolks. Try adding sultanas or cherries dusted in flour for a sweet taste.. After baking and whilst the cake is warm, spread with Jam or drizzle with lemon. Sprinkle with icing sugar or scatter with grated coconu or almond flakes.
