Rice Pudding


As it's autumn it's got to be rice pudding. It's filling and you can have it for breakfast with fruit or to snack on when feeling peckish.

Lots of different ways to cook it. I like the slow cooker version.  

4 oz pudding rice with either 1 litre of no sugar cream of soda or unsweetened almond milk. Pop into slow cooker on high for 4 hours with splash of vanilla essence & grated nutmeg. I added sukrin a sugar replacement. 

You can even add dried fruit such as sultanas or prunes.
