Genoise & Lange Du Chats
This week’s Task on tge Patisserie Course was a Fenoise with Lange du Chats.
Genoise is a fat less Sponge made using whisked eggs and sugar over a Bain Marie. When the mixture was at a texture of ribbons, beat in a little served flour. Simple as ever so delicious.
i decorated the Genoise with fresh berries and Lange du Chat Biscuits. The biscuits were simple to make using a mixture of icing sugar and egg whites with a dash of vanilla essence. 2 minutes in the oven and they were baked to a light crisp perfection.
